Cucumbers are a summer vegetable. Many people think of cucumbers as a long green fruit but there are many shapes and sizes and colors of cucumbers. Try eating one as you would an apple!
Storage: Cucumbers need to be stored in the fridge to retain their moisture. They will keep for 10+ days in the refrigerator if they are kept whole but will deteriorate quickly if cut up.
Preparation: Wash the skin to remove any dirt. You can peel a cucumber or leave the skin on. Cucumbers are delicious when eaten raw in salads, made into a chilled soup or dip, or blended, pureed or grated into a chilled vegetable soup stock. If you do not enjoy the texture of the seeds you can slice the cucumber in half and scoop them out. They are a great tasting and portable snack!
